A moment to savor


Students from the First Year Writing seminar Sugar and Spice recently visited the Biology Department’s Food Lab to share a holiday tradition with James B. Duke Associate Professor of Asian Studies and History Savita Nair. Since her college days, spicy coconut shrimp from Nair’s native region of Kerala, India, has been a staple of her family’s Thanksgiving dinner. The class made the same family recipe that Nair shared with readers in the Holiday 2014 edition of Edible Upcountry. To read more, visit

The Sugar and Spice seminar traces the history of common staples that became highly desirable items for European dining tables. Beginning with 16th century through 19th century networks that connected Europe, Asia, Africa, and the Caribbean, the class explores the movement of goods and people that have shaped the social and culinary worlds and considers contemporary issues surrounding the globalization and localization of food commodities.
